Cook Time: 10 minutes
Ingredients: 1 cup flour
4 brook trout filets
1 teaspoon lemon zest
1 teaspoon lemon juice
1 lemon wedge
1 pepper grinder
vegetable oil
some thyme or parsley (personal preference)
Directions: combine the flour, lemon zest, and lemon juice in a small dish, and dip the trout filets in the mixture until each filet is thrououghly coated. put some vegetable oil in a pan so that you are able to fry two filets at once. put the heat setting on 5 out of 10, or just halfway, and fry each filet until golden brown. i like to add pepper to the filets while i am cooking them so that it gets a lemon pepper taste seared into the fish. once the filets are done cooking and put on a plate with a paper towel to drain any leftover oil, add ground thyme to the filets or some parsley as you so please, and serve with a lemon wedge on the side.
Other Notes: this isnt truly dipped in batter, but its still a pretty tasty dish. and you may leave the skin on the filets to cook them, if cooked thoroughly the meat of the filets will come right off the skin fairly easily.
